Mexican Black Bean Soup Recipe

Ingredients:


Instructions:


  1. Sauté Onions and Garlic: In a large pot, heat 1 ½ tbsp of extra virgin olive oil over medium heat. Add the chopped yellow onions and cook until they are soft and translucent, about 5 minutes. Add the minced garlic and cook for an additional 1-2 minutes.


  2. Add Tomato Paste and Spices: Stir in 3 tbsp of tomato paste, 1 tsp chili powder, 1 tsp vegetable stock paste, 2 tsp dried oregano, ½ tsp ground cumin, ½ tsp ground coriander, and ½ tsp paprika. Cook for about 2 minutes, stirring frequently.


  3. Combine Remaining Ingredients: Add the can of diced tomatoes (with juices), the rinsed black beans, frozen sweet corn, and 1 cup of water. Stir well to combine.


  4. Simmer the Soup: Bring the mixture to a simmer. Cook for about 15-20 minutes, allowing the flavors to meld. Season with ¼ tsp ground black pepper, adjusting to taste.


  5. Serve: Ladle the soup into bowls and garnish with chopped fresh cilantro. If desired, top with vegan mozzarella shreds before serving.
