Okay, I’m officially obsessed with these no-bake chocolate pistachio bars and I think you’re going to be too. They’ve got this super creamy pistachio filling that tastes like a dream (thanks to a quick blend of pistachios and maple syrup), layered on a soft, sweet crust and topped with a smooth dark chocolate shell. The texture combo is everything. And the best part? No oven, no fuss—just blend, press, chill, and you’re done. These are perfect for when you want a sweet treat that feels kinda fancy but is secretly super easy to make.

Chocolate Pistachio Bars Recipe

Instructions:

  1. Crust: Preheat oven to 350°F (175°C). Blend oats and almonds in a food processor until finely ground. Add maple syrup, coconut oil, and vanilla; pulse until combined. Press into an 8x8 inch pan.

  2. Filling: Blend pistachios in the food processor until fine. Add maple syrup and blend until smooth. Spread over the cooled crust.

  3. Chocolate Topping: Melt dark chocolate chips and coconut oil in a saucepan over low heat. Stir in cocoa powder until smooth. Pour over the pistachio filling and spread evenly.

  4. Chill: Refrigerate for at least 1 hour until set. Cut into bars and enjoy!
