Coconut Papaya Popsicles 🥥
Updated: Jun 11, 2021
Sweet, healthy, & refreshing... the perfect summer treat! Make this recipe with us LIVE at our Free Plant-Based Cooking Class!

What you need:
9 oz ripe papaya, peeled
2½ oz maple syrup or coconut nectar
1½ oz lemon or lime juice
½ tsp vanilla bean paste or vanilla extract
7 oz coconut milk
5½ oz water
Try it yourself:
Place papaya, maple syrup, lemon juice, vanilla, coconut milk and water into my robot chef or a blender and blend approx. 1 min. Transfer mixture to approx. 8 popsicle molds, and place in freezer overnight. Tip: run your popsicle tray under hot water for a few seconds to get your popsicles to pop right out! Sprinkle with shredded coconut and serve immediately.
