Easy Chickpea Curry 🍛

This is my FAVORITE curry recipe and it's so easy to make!!! I lived in India for half a year so I absolutely LOVE Indian food and I love sharing this recipe:) Watch the live video making this recipe at our Free Plant-Based Cooking Class!👩‍🍳

What you need:

1 garlic glove

1/2 large onion

15 g olive oil

350 g fresh tomatoes or 1 can of diced tomatoes (no salt added)

2 cans of drained & rinsed chickpeas (no salt added)

1 tsp of vegetable stock paste (reduced sodium) or 1 cube crumbled

2 tsp of curry powder

25 g tomato paste (no salt added)

1 lime (freshly squeezed, juice only)

200 g fresh spinach leaves (optional)

brown basmati rice (optional)

vegan naan bread (optional)

Try it yourself:

In my robot chef or in a food chopper, chop the garlic & onions. Saute with olive oil for approx 3 min. Add tomatoes and chop for 6 sec. Then add 2 cans of drained and rinsed garbanzo beans (tip: always choose non-bpa cans with no salt added), and stir to combine. Now add your vegetable stock, curry powder, and tomato paste, then cook for approx 2 min. Add your lime juice & cook for approx. 10 min. Stir in optional spinach leaves just before serving. Serve hot alone or with optional brown basmati rice and vegan naan bread or bread of choice. Garnish with fresh parsley. Tip: Many brands of naan bread are not vegan, always check ingredients before buying, or make it yourself with my robot chef!
