Vegan Chorizo Tofu Scramble 🍳

Even though there are fantastic egg alternatives on the market, these tofu eggs are a must try!

What you need:

TJ's Soy Chorizo or Gardein breakfast sausages or Field Roast sausages

sprouted tofu or regular extra firm tofu (drained)

fresh spinach or kale

1/2 pint of cherry tomatoes or 1 green pepper

olive oil

garlic powder

black pepper


nutritional yeast

fresh cilantro (optional)

avocado or roasted baby potatoes (optional)

sprouted toast (optional)

Try it yourself:

Sauté our favorite Soy Chorizo by Trader Joe's (or use Gardein breakfast sausages or Field Roast sausages). In a separate pan sauté extra firm tofu (we prefer sprouted tofu) w/spinach or kale, cherry tomatoes or green peppers, and olive oil. While cooking tofu & veggies, add a lot of nutritional yeast, garlic powder, black pepper, & turmeric to taste! Garnish with fresh cilantro. Serve with a few slices of avocado, sprouted toast, or roasted baby potatoes. Tip: 15 min before cooking, wrap the tofu in a few paper towels and place something heavy on it to drain excess water from the tofu (or use a tofu press). Made w/❤️
