Introducing the BEST vegan mac & cheese that will blow your mind! π€―π€π€ͺ Growing up, mac & cheese was one of my favorite things to eat, so of course when I went plant-based, I had to veganize this.πI kid you not, everyone I make this for, both kids and adults, have no idea itβs vegan! π± They come back for second and third servings, guilt free! Ingredients:
3 oz raw unsalted cashews (soaked overnight)
2 russet potatoes
2 carrots
1 onion
4 oz vegan butter
1 oz lemon juice
1 tbsp dijon mustard
1 oz nutritional yeast
ΒΌ tsp ground cayenne pepper
ΒΌ tsp paprika
ΒΌ tsp ground black pepper
16 oz pasta of choice (I love Banza Chickpea Pasta)
ΒΌ oz olive oil
1 tsp garlic powder
2 oz panko bread crumbs
Easy Vegan Recipe | The Best Mac and Cheese:
Weigh cashews then cover with water and soak for at least 4 hours or overnight.
In my robot chef or on the stove add diced potatoes, carrots, onions, & 16 oz of water and cook 20 min/212Β°F/speed 1.
Meanwhile in separate pots, cook pasta according to package directions, and sautΓ© the breadcrumbs until golden brown with some olive oil, garlic powder, and black pepper.
If not using my robot chef, transfer cooked veggies & water to a blender. Add the drained & rinsed cashews, vegan butter, lemon juice, mustard, nutritional yeast, cayenne powder, paprika, & black pepper, then blend 1 min/speed 7 or until completely smooth.
Pour cheese mixture over your favorite pasta and generously sprinkle with breadcrumbs. Serve with a side salad for a perfectly satisfying meal! Store any leftovers in a glass storage container in the freezer, so when your have another mac & cheese craving just reheat and eat:)
