This is the perfect dish to bring to a plant-based picnic. Everyone will be raving about the crunchy, tangy, spicy flavor combination! Ingredients:
Β½ oz fresh cilantro
2 garlic cloves
1 jalapeΓ±o chili, de-seeded
1 oz olive oil
Β½ oz red wine vinegar
1 oz lime juice
Β½ oz pure maple syrup
1 tbsp fajita seasoning
β tsp black pepper
7 oz green cabbage
1 apple, quartered
4 oz red cabbage
3 carrots
2 oz raw pecans (optional)
Easy Vegan Recipe | Texas Coleslaw:
In my robot chef or a large food processor add cilantro, garlic and jalapeΓ±o and chop 3 sec/speed 7.
Add olive oil, vinegar, lime juice, maple seasoning, fajita seasoning, black pepper and mix 20 sec/speed 3.
Add green cabbage and apple and chop 3 sec/speed 5. Transfer to a large serving bowl. Place red cabbage, carrot, and pecans into mixing bowl and chop 3 sec/speed 5.
Transfer to serving bowl with green cabbage, apple and dressing mixture, stir to combine and enjoy.
Tip:
Use gloves when deseeding jalapeΓ±o chilis so you don't get hot pepper hands LOL. You can make your own fajita seasoning by combining some chili powder, oregano, cumin, garlic powder, cayenne and black pepper.
