400 g carrots (approx. 3-5)
25 g raisins
15 g lemon juice, freshly squeezed
1 garlic clove
½ tsp ground paprika
½ tsp ground cinnamon
1 pinch ground cayenne pepper
10 g extra virgin olive oil
5 - 10 sprigs fresh cilantro
1 pinch freshly ground black pepper
20 g pistachio nuts, shelled & unsalted (optional)

In my robot chef or a large food processor, add all ingredients and chop until desired consistency. Serve immediately or store in fridge up to 3 days.
