Raw Spiced Carrot Salad Recipe 🥕

This salad is sooooooo good! I promise you will be shocked how delicious raw carrots can taste when you add the right spices;) Watch us make this recipe LIVE at our Free Plant-Based Cooking Class!

What you need:

  • 400 g carrots (approx. 3-5)

  • 1 apple

  • 25 g raisins

  • 15 g lemon juice, freshly squeezed

  • 1 garlic clove

  • ½ tsp ground cumin

  • ½ tsp ground paprika

  • ½ tsp ground cinnamon

  • 1 pinch ground cayenne pepper

  • 10 g extra virgin olive oil

  • 5 - 10 sprigs fresh cilantro

  • 1 pinch freshly ground black pepper

  • 20 g pistachio nuts, shelled & unsalted (or other nuts of choice)

Try it yourself:

  1. In my robot chef or a large food chopper, add carrots, apple, raisins, lemon juice, garlic, cumin, paprika, cinnamon, cayenne pepper, olive oil, cilantro, black pepper and nuts and chop until desired consistency. Serve immediately or store in fridge up to 3 days.
