This salad is sooooooo good! I promise you will be shocked how delicious raw carrots can taste when you add the right spices;) Nuts can be omitted.
𝑱𝒐𝒊𝒏 𝒐𝒖𝒓 𝑭𝒓𝒆𝒆 𝑷𝒍𝒂𝒏𝒕-𝑩𝒂𝒔𝒆𝒅 𝑪𝒐𝒐𝒌𝒊𝒏𝒈 𝑪𝒍𝒂𝒔𝒔 𝒐𝒏 𝑺𝒖𝒏𝒅𝒂𝒚!
400 g carrots (approx. 3-5)
25 g raisins
15 g lemon juice, freshly squeezed
1 garlic clove
½ tsp ground cumin
½ tsp ground paprika
½ tsp ground cinnamon
1 pinch ground cayenne pepper
10 g extra virgin olive oil
5 - 10 sprigs fresh cilantro
1 pinch freshly ground black pepper
20 g pistachio nuts, shelled & unsalted (or other nuts of choice)
In my robot chef or a large food chopper, add carrots, apple, raisins, lemon juice, garlic, cumin, paprika, cinnamon, cayenne pepper, olive oil, cilantro, black pepper and nuts and chop until desired consistency. Serve immediately or store in fridge up to 3 days.
