Did you know you can make your own protein bars at home? These taste just like girl scout thin mint cookies, but so much healthier! This easy no-bake vegan snack recipe is surprisingly filling and oh-so-satisfying! If you love mint and you love chocolate, you will devour these! Make a big batch, freeze, and grab on the go as needed! 𝑺𝒆𝒆 𝒚𝒐𝒖 𝒂𝒕 𝒐𝒖𝒓 𝑭𝒓𝒆𝒆 𝑷𝒍𝒂𝒏𝒕-𝑩𝒂𝒔𝒆𝒅 𝑪𝒐𝒐𝒌𝒊𝒏𝒈 𝑪𝒍𝒂𝒔𝒔!
Ingredients:
75 g non-dairy milk
125 g nut butter
100 g pure maple syrup
135 g rolled oats
75 g puffed rice cereal
25 g cocoa powder, unsweetened
20 g protein powder
10 drops peppermint extract
90 g dark chocolate chips
Easy Vegan Recipe | Mint Chocolate Protein Bars:
Line a square baking tin (approx. 20 cm) with parchment paper.
In my robot chef or on the stove, melt nut butter and syrup 4 min/100°C/speed 2.
Add rolled oats, puffed rice, cocoa powder, protein powder and peppermint extract then stir 20 sec/speed 3. Let cool for 10 minutes.
Add chocolate chips and stir 15 sec/speed 2.
Slowly mix in non-dairy milk until mixture loosens. Transfer to prepared tin and press down with the back of a large spoon.
Cover and place in fridge for at least 4 hours or overnight. Once chilled, lift parchment from tin and cut into 12 bars. Keep refrigerated for up to 5 days in a sealed container.
