Vegan Banana Bread 🍌
Who doesn't love banana bread! This was my grandmother's favorite treat to give out during the holidays and I think my vegan version would do her proud:) Enjoy this melt-in-your-mouth vegan banana bread! Walnuts are optional of course.

Ingredients:
130 g unsalted vegan butter
350 g ripe bananas (approx. 4 bananas)
150 g cane sugar (or monkfruit sugar substitute)
2/3 cup unsweetened applesauce
220 g plain flour
2 tsp baking powder
1 pinch salt
1 tsp baking soda
100 g non-dairy milk
2 tsp pure vanilla extract (or vanilla bean paste)
walnuts, vegan chocolate chips (optional topping)
Easy Vegan Recipe | Banana Bread with Walnuts:
Preheat oven to 350°F/180°C. Grease a deep-sided loaf tin (25 x 10 x 11 cm).
Place ripe bananas into a food processor or my robot chef and mash 5 sec/speed 6.
Add vegan butter and sugar and mix 20 sec/speed 4.
Add applesauce and mix 10 sec/speed 4.
Add flour, baking powder, salt, baking soda, non-dairy milk and vanilla extract and mix 20 sec/speed 4.
Pour into prepared loaf tin, add optional toppings, and then bake for 50-60 minutes or until a wooden skewer inserted into the center of the bread comes out clean.
Allow to cool in tin for 30 minutes before turning out onto a wire rack. Serve warm or allow to cool completely before transferring into a sealable container. My grandma would wrap them in cellophane with a pretty bow:)
