Who doesn't love banana bread! This was my grandmother's favorite treat to give out during the holidays and I think my vegan version would do her proud:) Enjoy this melt-in-your-mouth vegan banana bread! Walnuts are optional of course.

Vegan Banana Bread Recipe ๐๐
Prep Time:ย 60 minutes
Servings: 10 servings
Ingredients:
ยพ cupย / 130 g unsalted vegan butter
350 g ripe bananas (approx. 4 bananas)
ยพ cupย / 150 g cane sugar (or monkfruit sugar substitute)
2/3 cup unsweetened applesauce
1 ยพ cups / 220 g plain flour
2 tsp baking powder
1 pinch salt
1 tsp baking soda
โ cup / 100 g non-dairy milk
2 tsp pure vanilla extract (or vanilla bean paste)
walnuts, vegan chocolate chips (optional topping)
Instructions:
Preheat Oven:ย Preheat your oven to 350ยฐF (175ยฐC). Grease a loaf pan or line it with parchment paper.
Cream Butter and Sugar:ย In a large mixing bowl, beat the vegan butter and cane sugar together until light and fluffy.
Add Bananas and Applesauce:ย Mash the ripe bananas in a separate bowl. Add the mashed bananas and unsweetened applesauce to the butter mixture and mix until well combined.
Combine Dry Ingredients:ย In another bowl, whisk together the flour, baking powder, salt, and baking soda.
Mix Wet and Dry Ingredients:ย Gradually add the dry mixture to the wet ingredients, alternating with the non-dairy milk and vanilla extract. Stir until just combined. Be careful not to overmix.
Add Toppings:ย If desired, fold in walnuts or vegan chocolate chips.
Pour into Pan:ย Pour the batter into the prepared loaf pan and smooth the top with a spatula.
Bake:ย Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
Cool:ย Remove from the oven and let the banana bread cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
Serve:ย Slice and enjoy your delicious Vegan Banana Bread!
