These delicious kid-friendly easy vegan sugar cookies with sprinkles are a definite crowd pleaser! Bring them to a party and no-one will know they are vegan! To make these cookies even healthier use monkfruit as a sugar substitute.
𝑺𝒆𝒆 𝒚𝒐𝒖 𝒂𝒕 𝒐𝒖𝒓 𝑭𝒓𝒆𝒆 𝑷𝒍𝒂𝒏𝒕-𝑩𝒂𝒔𝒆𝒅 𝑪𝒐𝒐𝒌𝒊𝒏𝒈 𝑪𝒍𝒂𝒔𝒔!
6 oz cane sugar (or monkfruit sugar substitute)
6 oz unsalted vegan butter, chilled, diced (½ in.)
1/3 cup unsweetened applesauce
1 tsp vanilla extract (or vanilla bean paste)
12 oz all-purpose flour
¼ tsp baking powder
⅛ tsp baking soda
1 pinch salt
Easy Vegan Recipe | Sugar Cookies with Sprinkles:
Preheat oven to 350°F. Line a baking sheet with parchment paper and set aside.
Grind sugar in a good blender or in my robot chef 10 sec/speed 10 until a powder is formed. Add vegan butter, applesauce, vanilla, flour, baking powder, baking soda and salt and mix 8 sec/speed 7. Scrape down sides of mixing bowl with spatula and mix a further 5 sec/speed 7.
Transfer dough to a large sheet of cling wrap on a flat surface and roll into a log. Freeze log for 20min so they are easier to cut. Half the log makes 18 small cookies, so I usually save half in the freezer. Roll the log in a generous amount of sprinkles, then cut into equal pieces.
Place cookies onto prepared baking sheet and bake for 10-12 minutes (350°F) until slightly golden. Store in an airtight glass container. Best consumed within a few days. Make the other half whenever you get another cookie craving!
