Soft Walnut Date Cake Recipe 🥮

What you need:

  • 220 g vegan butter

  • 220 g spelt flour (plus extra for dusting)

  • 100 g raw walnuts

  • 190 g pitted dates

  • 190 g water

  • 75 g monkfruit sugar substitute

  • 1 tsp baking powder

  • 1 tsp baking soda

  • 1 tsp ground cinnamon

  • 1/3 cup unsweetened applesauce

  • 1 tsp vanilla bean paste (or vanilla extract)

  • 140 g maple or date syrup

Try it yourself:

  1. Preheat oven to 180ºC/356°F. Grease a bundt cake pan (22-24 cm) and sprinkle with flour. Set aside.

  2. Place walnuts into my robot chef or a food chopper and chop approx. 2 sec. Transfer into a bowl and reserve.

  3. Place dates and water into my robot chef or on the stove and heat approx. 3 min at 70°C/158°F.

  4. Add flour, monkfruit, baking powder, baking soda, cinnamon, vegan butter, applesauce and vanilla and mix until well combined.

  5. Add 60 g reserved chopped walnuts and mix with spatula. Transfer mixture into prepared cake pan and bake for 45 minutes or until a skewer inserted in the center comes out clean. Allow cake to cool in pan for approx. 20 minutes before gently flipping onto a serving plate.

  6. Pour syrup on top of cake and sprinkle with remaining chopped walnuts before serving.
