Wondering what to bring to Thanksgiving? This super soft n' sweet dessert is a sure crowd pleaser! Nuts can be omitted if needed.
𝑱𝒐𝒊𝒏 𝒐𝒖𝒓 𝑭𝒓𝒆𝒆 𝑷𝒍𝒂𝒏𝒕-𝑩𝒂𝒔𝒆𝒅 𝑪𝒐𝒐𝒌𝒊𝒏𝒈 𝑪𝒍𝒂𝒔𝒔 𝒐𝒏 𝑺𝒖𝒏𝒅𝒂𝒚!
Ingredients:
220 g vegan butter
220 g spelt flour (plus extra for dusting)
100 g raw walnuts
190 g pitted dates
190 g water
75 g monkfruit sugar substitute
1 tsp baking powder
1 tsp baking soda
1 tsp ground cinnamon
1/3 cup unsweetened applesauce
1 tsp vanilla bean paste (or vanilla extract)
140 g maple or date syrup
Easy Recipe:
Preheat oven to 180ºC/356°F. Grease a bundt cake pan (22-24 cm) and sprinkle with flour. Set aside.
Place walnuts into my robot chef or a food chopper and chop approx. 2 sec. Transfer into a bowl and reserve.
Place dates and water into my robot chef or on the stove and heat approx. 3 min at 70°C/158°F.
Add flour, monkfruit, baking powder, baking soda, cinnamon, vegan butter, applesauce and vanilla and mix until well combined.
Add 60 g reserved chopped walnuts and mix with spatula. Transfer mixture into prepared cake pan and bake for 45 minutes or until a skewer inserted in the center comes out clean. Allow cake to cool in pan for approx. 20 minutes before gently flipping onto a serving plate.
Pour syrup on top of cake and sprinkle with remaining chopped walnuts before serving.
