Coconut Rice Pudding 🥥

If you have a sweet tooth, this one's for you! Enjoy warm in the winter, or chilled in the summer... for breakfast or dessert. Get creative and add your favorite toppings:)
𝑱𝒐𝒊𝒏 𝒐𝒖𝒓 𝑭𝒓𝒆𝒆 𝑷𝒍𝒂𝒏𝒕-𝑩𝒂𝒔𝒆𝒅 𝑪𝒐𝒐𝒌𝒊𝒏𝒈 𝑪𝒍𝒂𝒔𝒔 𝒐𝒏 𝑺𝒖𝒏𝒅𝒂𝒚!

Ingredients:
1 can coconut milk (383 g)
477 g non-dairy milk of choice
160 g Arborio rice
½ tsp vanilla bean paste
½ tsp ground cardamom
1 tbsp pure maple syrup, plus extra to drizzle
fresh fruit, cinnamon, cacao nibs, or toasted desiccated coconut (optional toppings)
Easy Recipe:
Cook milk and rice together in my robot chef or on the stove for 35 min/90°C/194°F.
Add vanilla, cardamom and syrup. Stir through using spatula, then cook 1 min/90°C/194°F. Remove lid and allow to cool and thicken for 10 minutes before serving.
Enjoy warm or cold with optional toppings and a drizzle of syrup.
