Coconut Rice Pudding 🥥

If you have a sweet tooth, this one's for you! Enjoy warm in the winter, or chilled in the summer... for breakfast or dessert. Get creative and add your favorite toppings:)

Ingredients:

  • 1 can coconut milk (383 g)

  • 477 g non-dairy milk of choice

  • 160 g Arborio rice

  • ½ tsp vanilla bean paste

  • ½ tsp ground cardamom

  • 1 tbsp pure maple syrup, plus extra to drizzle

  • fresh fruit, cinnamon, cacao nibs, or toasted desiccated coconut (optional toppings)

Easy Recipe:

  1. Cook milk and rice together in my robot chef or on the stove for 35 min/90°C/194°F.

  2. Add vanilla, cardamom and syrup. Stir through using spatula, then cook 1 min/90°C/194°F. Remove lid and allow to cool and thicken for 10 minutes before serving.

  3. Enjoy warm or cold with optional toppings and a drizzle of syrup.
