Your taste buds will be jumping with joy while you devour this soup!
What you need: yellow onion
tomato paste (no salt added) 2 garlic cloves
vegetable stock paste oregano
1 can of diced tomatoes (no salt added)
2 cans of rinsed & drained black beans (no salt added)
frozen sweet corn
vegan cheese (optional)
tortilla chips (optional)
fresh cilantro (optional)
Try it yourself:
In my robot chef or a food chopper, add 6 oz onions, 2.5 oz tomato paste (no salt added), 2 garlic cloves, 1/2 tsp chili powder, 1 tsp vegetable stock paste, 2 tsp oregano, 1/2 tsp cumin, 1/2 tsp coriander, 1/2 tsp smoked paprika, 1/2 oz olive oil, and then chop together. Next cook for approx. 3 min in my robot chef or on the stove. Now add 1 can of diced tomatoes, and cook for 5 min. Add 2 cans of rinsed & drained black beans, 4 oz frozen sweet corn, 8 oz water, 1/4 tsp black pepper, and cook for 5 more min. Serve with your favorite vegan cheese, tortilla chips, and garnish with fresh cilantro. Tip: when choosing your canned goods, look for the ones that say non-bpa with no salt added.
