Warm Vegan Apple Crisp Recipe

Ingredients:


For the filling: use the leftover apple mixture from my apple cider recipe or...

  • 6 large apples (like Granny Smith or Honeycrisp), peeled, cored, and sliced

  • 2 tbsp lemon juice

  • 1/2 cup monkfruit sugar substitute

  • 2 tsp cinnamon

  • 1/2 tsp nutmeg

  • 1/4 tsp salt

  • 2 tbsp cornstarch or arrowroot powder

  • 1/2 cup water

For the topping:

  • 1 cup rolled oats

  • 1/2 cup almond flour or oat flour

  • 1/2 cup coconut sugar or maple syrup

  • 1/2 tsp cinnamon

  • 1/4 tsp salt

  • 1/3 cup coconut oil, melted (or vegan butter)

  • Optional topping: dairy-free vanilla bean ice cream

Instructions:


Prepare the filling: (skip this if using the apple mixture from my apple cider recipe)

  1. Preheat your oven to 350°F (175°C).

  2. In a large mixing bowl, combine the apples, lemon juice, sugar, cinnamon, nutmeg, and salt. Mix until apples are well-coated.

  3. Dissolve the cornstarch or arrowroot powder in the water, then add to the apple mixture. Stir to combine.

  4. Transfer the apple mixture to a baking dish, spreading it out evenly.

Prepare the topping:

  1. In a separate bowl, combine the rolled oats, flour, sugar, cinnamon, and salt.

  2. Pour in the melted coconut oil or vegan butter, and mix until the dry ingredients are well-coated and a crumbly mixture forms.

Assemble and bake:

  1. Evenly sprinkle the oat topping over the apple mixture in the baking dish.

  2. Bake in the preheated oven for about 30-45 minutes, or until the topping is golden brown and the apple filling is bubbly.

Optionally, you can omit the salt from this recipe.
