South African Chakalaka Recipe

Servings: 4

Prep Time: 10 minutes

Cook Time: 20 minutes

Total Time: 30 minutes

Ingredients:

  • 5 oz onions

  • 2 garlic cloves

  • 2 cm piece fresh ginger, peeled

  • 2 carrots

  • 1 green bell pepper

  • 2 fresh green chilies, de-seeded

  • 1 oz olive oil

  • 2 oz tomato paste (no salt added)

  • 1 tsp paprika

  • 1 tbsp curry powder

  • 1 ripe tomato, cut into pieces (3 cm)

  • 2 pinches ground black pepper

  • 15 oz can of baked beans (with sauce)

  • optional sides: bread or rice

Instructions:

  1. Prepare the Vegetables: Finely chop the onions, garlic, ginger, green bell pepper, and green chilies. Grate the carrots and cut the ripe tomato into pieces.

  2. Sauté the Aromatics: In a large pan, heat the olive oil over medium heat. Add the chopped onions, garlic, and ginger, and sauté until the onions are soft and translucent, about 3-4 minutes.

  3. Cook the Vegetables: Add the diced green bell pepper, chilies, and grated carrots to the pan. Stir and cook for another 5 minutes, until the vegetables are softened.

  4. Add Spices and Tomato: Stir in the tomato paste, paprika, and curry powder. Cook for 2 minutes, allowing the spices to blend well with the vegetables. Add the chopped tomato pieces and ground black pepper, and cook for another 3 minutes.

  5. Incorporate the Baked Beans: Pour in the can of baked beans with its sauce. Stir to combine everything, and let the mixture simmer for 5 minutes, allowing the flavors to meld together.

  6. Serve: Once cooked, remove the pan from the heat. Serve your chakalaka warm with bread or rice on the side for a complete meal.
