Vegan Meatball Marinara Recipe
Servings: 4

Cook Time: 25 minutes
Total Time: 35 minutes
Ingredients:
½ cup / 4 oz yellow onions
2 garlic cloves
¼ cup / 2 oz extra virgin olive oil
3 ¾ cups / 30 oz fresh or canned crushed tomatoes (no salt added)
1 tsp monkfruit
1 tsp basil or 10 fresh basil leaves
steamed spinach (optional)
Instructions:
Prepare Ingredients: Dice the yellow onions and mince the garlic cloves.
Sauté Onions and Garlic: In a large skillet, heat 2 oz (about ¼ cup) of extra virgin olive oil over medium heat. Add the diced onions and sauté until translucent, about 5 minutes. Add the minced garlic and cook for an additional 1-2 minutes, stirring frequently.
Add Tomatoes and Seasonings: Stir in 30 oz (about 3 ¾ cups) of crushed tomatoes, 1 tsp monkfruit, 1 tsp basil (or the fresh basil leaves), and a pinch of thyme, oregano, and black pepper if using. Mix well and bring to a simmer.
Cook Marinara: Allow the sauce to simmer for about 15-20 minutes, stirring occasionally. Adjust seasoning to taste.
Cook Beyond Meatballs: While the sauce simmers, prepare the Beyond Meatballs according to package instructions, either by baking or pan-frying.
Combine and Serve: Once the meatballs are cooked, add them to the marinara sauce. If desired, serve over steamed spinach or your favorite pasta. Enjoy!
