Vegan Meatball Marinara 🍝

This is the perfect meal to cook for your meat-luvin' friends to show them how AMAZING vegan food is! I promise they won't be able to tell the difference;) And once you make our delicious no-salt marinara sauce you will never buy another jar of pre-made sauce!

Vegan Meatball Marinara Recipe

Prep Time: 10 minutes

Cook Time: 25 minutes

Total Time: 35 minutes


Ingredients:


Instructions:


  1. Prepare Ingredients: Dice the yellow onions and mince the garlic cloves.


  2. Sauté Onions and Garlic: In a large skillet, heat 2 oz (about ¼ cup) of extra virgin olive oil over medium heat. Add the diced onions and sauté until translucent, about 5 minutes. Add the minced garlic and cook for an additional 1-2 minutes, stirring frequently.


  3. Add Tomatoes and Seasonings: Stir in 30 oz (about 3 ¾ cups) of crushed tomatoes, 1 tsp monkfruit, 1 tsp basil (or the fresh basil leaves), and a pinch of thyme, oregano, and black pepper if using. Mix well and bring to a simmer.


  4. Cook Marinara: Allow the sauce to simmer for about 15-20 minutes, stirring occasionally. Adjust seasoning to taste.


  5. Cook Beyond Meatballs: While the sauce simmers, prepare the Beyond Meatballs according to package instructions, either by baking or pan-frying.


  6. Combine and Serve: Once the meatballs are cooked, add them to the marinara sauce. If desired, serve over steamed spinach or your favorite pasta. Enjoy!
